¿Y cómo se consigue todo lo que tu has consegui-do con sólo 40 años?No creo que haya conseguido nada. Creo que hetrazado un camino y me mantengo en el caminoque me tracé. No tengo conciencia de haber con-seguido nada. Entiendo que el éxito es algo efíme-ro y carente de interés. Al final lo que perdura eslo que eres capaz de crear a tu alrededor másinmediato, tu familia, tus amigos, tu equipo,… esoes lo que de verdad importa. Luego, la repercusióndel éxito o la dimensión del éxito en el fondo esfatua, es tremendamente volátil y cada vez meinteresa menos. And how have you achieved everything you haveachieved by age 40?I don’t think I’ve achieved anything. I think I’veforged my own pathway, and I stay on the path-way I’ve forged. I am not aware of having achie-ved anything. I think that success is fleeting andinherently uninteresting. ¿Qué recuerdas de los consejos de Ferrán Adrià?A mí Ferran me enseñó las tres cosas más impor-tantes que debe saber un cocinero, por lo menoscuando te empiezas a mover, por decirlo de algu-na manera, en la élite. Primero, la constancia en tucamino: tener muy claro lo que quieres y seguirlo.Luego el sacrificio y la autocrítica. Si tu no eres elmás autocrítico con tu obra, si eres complacientecon lo que haces, es imposible que hagas algorealmente bueno, algo grande.

Do you still recall the advice Ferrán Adrià gave you?Ferran taught me three of the most importantthings any chef should know, at least when youbegin to move, shall we say, in the elite. First, stickto your path: be very clear about what you wantand stick to it. Then come sacrifice and self-criti-cism. If you are not the most critical of anyone ofyour work, if you’re complacent with what you do,it will be impossible for you to do anything trulygood, anything great.

Todos tus proyectos presentan caracteres muydiferentes, desde el bocadillo hasta el menú de140 euros ¿cómo los definirías a cada uno deesos lugares? Vi cool, Sergi Arola Gastro, ArolaBcn, Durius River Café… No creo que sean tan diferentes. Creo que en elfondo son muy iguales. De hecho, todos parten dela misma filosofía, de cómo me gusta comer a míy relacionarme alrededor de la mesa a mí. A mí mepuede gustar mucho estar en un restaurante carí-simo pintando la mona y también con un bocatay una cerveza o desayunando esta mañana en elPinocho. Puedo tener muchísimos defectos pero loque no soy es clasista, no soy elitista. Diferenciomuy bien lo que es alta cocina de lo que es altagastronomía porque lo diferencio muy bien lo quees cocina de lo que gastronomía.All of your projects have very different persona-lities, from sandwiches to a set menu costing140 euros. And I wanted to feel free. I have amaxim: I prefer to feel free than have some-one tell me that I am. And I follow it to theletter.

glado así porque para mí la vida como jefede cocina hubiera sido mucho más fácil. If I hadn’t had Sara I wouldnever have gotten involved in all this becau-se being a head chef would have been amuch easier life for me. En Barcelona el director es tu hermano Eduard.¿Qué ingrediente es tu familia en tu vida?Para mí, no hay otra persona en el mundo enla que pueda confiar más que en mi herma-no. Es un vínculo de sangre que va más alláde la ética o cualquier tipo de historia, esabsolutamente sentimental. Pero es que ade-más, mi hermano es absolutamente superdo-tado para el trabajo que hace aquí en ArolaBarcelona. Nadie sería capaz de hacerlomejor que él, sin duda. Te podría decir contotal honestidad que el 80% del éxito de esterestaurante se debe a mi hermano.In Barcelona your manager is your brotherEduard. A ver, a míme encantaba el reconocimiento deMichelín pero el reconocimiento de Michelínte obliga a si tienes una querer dos y si tie-nes dos tener mentalidad de tres y a missocios no les importaba. A mis socios sólo lesimportaba el dinero. Lo que premia Michelínes un compromiso y un trato con el cliente,un saber hacer las cosas, una relación, unacalidad, no es mercadeo.How do you digest the Michelin stars andprizes like “best chef of the year”?

Quickly, by setting them aside and startingfrom scratch all over again. Of course theywere important. I mean, I loved getting theMichelin stars, but recognition fromMichelin means that if you have one staryou want two, and if you have two you haveto have the mindset of three, and my part-ners weren’t concerned about it. All mypartners cared about was money. WhatMichelin rewards is commitment and custo-mer service, knowing how do to things right,a relationship, a quality. It’s not about mar-keting.

¿Hay algún fracaso en tu carrera profesional?Jajajaja, claro. Muchos. Muchas cosas quehaces con ilusión y se rompen. Pero hay quesobreponerse. Los fracasos no valen que pier-das el ánimo porque lo que te rodea y lascosas importantes siempre valen más la pena.Have there been any failures in your career?(Laughing) Of course, many. Yo recuerdo las primerasveces en que entré en algunas cocinas enque los jefes de cocina se daban la vueltapara que no vieras cómo preparaban deter-minadas salsas,… Hoy en día no sólo no pasaeso sino que es como una competición dehaber quién consigue preparar lo más nove-doso o más suculento. I d’aquests dos anys, quin balanç en faries? Sohow would you take stock of these two years?Un balanç molt positiu. Al principi ens suposà unesforç considerable (sobretot a nivell logístic, jaque no hem d’oblidar que estem en una illa) però laveritat és que la gent ha respost molt bé a la nos-tra proposta, tant el turisme com els propiseivissencs. La veritat es que hem superat les nos-tres espectatives.Very positively. Doncs la veritat és que durant aquestsdos anys hem tingut la sort de gaudir,tant jo com la Cristina (la meva parella)de l’amistat d’en Borja Thyssen i la sevadona, la Blanca Cuesta. Són una gentamabilíssima, de caràcter senzill i amb elspeus molt ben posats a terra. De fet jaeren clients de la nostra botiga de Platjad’Aro, però la coincidència ens portà queells es compraren la casa d’Eïvissa pocabans que nosaltres vinguéssim a obrir labotiga. Això va fer que sorgís una relaciód’amistat, que encara es manté. A mésvull aprofitar l’ocasió per agrair-los l’aju-

da i les oportunitats que ens han ofert envaries ocasions. Gràcies a ells el nom i lesjoies de Wesselton han aparegut enreportatges de “Hola”, “GQ”,... Degut al’amistat que ens uneix, els varem obse-quiar amb les aliances de casament, fetesexpressament i al seu gust en platí.I a part d’ells hem gaudit de la presènciad’en Guti i la seva parella, l’Arantxa, i deDanny Tenagila (per molts considerat elmillor DJ del món), Giselle Bündchen,Caroline Scheufele (propietària deChopard), Carmen Thyssen, etc..
