The grapes for this wine come from a single vineyard in Maipo Alto, in Pirque, at the foothills of the Andes mountain range, determining a deep clay loam soil. The vineyard have direct influence from the proximity of the Maipo River and from the algtude, some 2600 h above sea level. Vineyard yield: 6.5 ton/ha Harvest date: April 15
TECHNICAL NOTES
Grapes were harvested and handpicked the second week of April, once the desired balance between sugars and acids was achieved, and the ripeness of the tannins peaked in the vine. VARIETAL SAUVIGNON BLANC
VARIETY SYRAH (100%) ORIGIN Maule Valley, Chile VINEYARDS
Vineyards located at the southern limit of the valley. The summer in this region is hot and dry, while autumn is characterized by the absence of rain. The Syrah grapes were harvested at the end of May, ensuring the highest possible natural sugar concentragon on the vine. Vineyard yield: 7.5 ton/ha Harvest date: May 30

There was no malolacgc fermentagon so that the wine would preserve its acidity and freshness.
TASTING NOTES
This is the first red sweet wine made in Chile under these characterisgcs on 2003. The idea was to make a wine both disgncgve and new. It is different to a Port or forgfied style wine, where sugars and alcohol contents are higher, but the aromas are more evolved and aged, lacking the freshness of a young wine, like this Late Harvest Syrah. It is a wine of intense and deep color, with a complex nose blending blueberries and blackberries with a linle biner, vanilla and tobacco. In the mouth it is a thick, generous wine with a perfectly balanced acidity that yields to a luscious and lingering finish.
SERVE
Its place is next to chocolate, gramisu, or by itself early in the evening. Serve at 12°C, its soh and well integrated tannins will allow it.
LATE HARVEST SYRAH TARDIO
VARIETY PINK MUSCAT (60%) – SAUVIGNON BLANC (40%) ORIGIN Maule Valley, Chile. VINEYARDS
Grapes for this wine come from our vineyard located in the southern edge of the Maule Valley. Poor soils of clay structure ensure perfect and even ripeness. Warm summers with predominant southern winds provide a nice balance of sugars and acids. This condigon allows the grapes to mature slowly and obtaining a perfect and healthy overipeness. Harvest date: May 30.
TECHNICAL NOTES
Grapes are late harvested, in Chile that means very late in May. Fermentagon begins in stainless steel tanks and finishes in french and american oak barrels aher 12 months. The wine obtained is naturally sweet, with enough acidity to harmonizes, and with subtle touches of oak.
TASTING NOTES
Yellow color with typical golden touches of late harvested grapes. Ripe fruit aromas from the Muscat grapes, combined very well with honey notes and a delicate bunery scent. In the mouth its natural sweetness is well balanced with the fresh acidity provided by the Sauvignon blanc.
SERVE Serve cold between 9°C and 10°C. Enjoy as an aperigf, or with first courses of intense aromas like foi gras, serrano ham (prociuno) with melon. Also ideal for sweets and desserts aher a meal. Hint: If used to accompany desserts, make sure the desserts are not sweeter than the wine.
LATE HARVEST MOSCATEL TARDIO (SWEET WHITE WINE)
BRUT SPARKLING WINE
VARIETY 95% CHARDONNAY -‐ 5% MOSCATEL DE ALEJANDRIA ORIGIN Quillón, Itata Valley, 8th.Region, Chile VITICULTURE
The grapes for this wine are grown on the southern rolling hills of Cerro Cayumanqui. The soil there is composed of medium ferglity red clay, and the region shows an annual rainfall of 800 mm. These topographic condigons, as well as the combinagon of moderate temperatures in spring and summer, with adequate sunshine, allow a slow and delicate ripening process of the fruit.
Training system: High trellis; yield: 9 ton/ha. Harvest date: last days of February, first days of March.
VINIFICATION
Was made at the “Valle Hermoso” winery where the grapes were picked by hand, carefully selected and cooled before pressing. The sgll wine was fermented with nagve yeasts at low temperatures to achieve fresh and fruity aromas. The second fermentagon was made in tanks (Charmat system), at 15 – 17°C (59 – 63°F) during 3 weeks. Once the process was finished, the sparkling wine was kept 4 months on its lees. This allowed the incorporagon and dissolugon of all favorable substances produced by the yeast’s autolysis into the wine. Date of bonling: First week of December, 2011
TASTING NOTES:
Pale yellow, with slight greenish hues, the nice aromas or this wine show fresh notes of pineapple and unripe peaches, orange blossoms, pear, green apples, and a shade of toasted almonds. Its delicate sweetness is well balanced with its acidity, enhanced by a touch of white fruits. It feels fresh on the palate, with good persistence. Its delicate and long lasgng bubbles endure all along the tasgng.
WINE SERVICE:
Serving temperature: 7 – 8°C (45 – 47°F). This Extra Brut Sparkling Wine can be enjoyed as an aperigf, but it also matches well with a great variety of meals, such as seafood or dishes with delicate flavors. And it is perfect to pair with fruits at the end of a dinner.
