Esta guía desde su creación pretende dar a conocer la múltiple y selecta variedad de restaurantes situados en el inte-
rior de los más importantes hoteles de Madrid. Estas son las preguntas que nos gustaría nos pudiera contestar:
¿Cual cree que ha sido el problema hasta tiempos no muy lejanos para que la cocina de estos restaurantes no tuviese
demasiada fama?
En aquellos establecimientos que se hacía alta cocina o cocina de vanguardia no se había sabido orientar el marketing del
restaurante diferenciando las dos líneas de producto, restauración y alojamiento. Los empresarios hoteleros no tardaron en
darse cuenta de que el hecho de crear una marca de calidad en restauración con un chef que sepa adecuar sus productos y
orientarlos al público general, podían aumentar sus ingresos y dinamizar la imagen general del hotel.

¿Qué destacaría como puntos favorables y cuales no tanto, de
estar dentro de un Hotel?
Favorables: el equipo humano y la logística suele ser mas extensa en
los hoteles al tener varios departamentos asociados a alimentos y bebidas
que intervienen en el proceso de venta y organización, destinados a mejo-
rar la experiencia del cliente. Además, en los hoteles con cierto renombre
tenemos ya clientes potenciales dentro de nuestras instalaciones.
No tan favorables: Dadas las características de los locales, no siem-
pre es posible dar una entrada directa al restaurante desde la calle y se
ha de tener la capacidad necesaria necesarias para atender a todos los
departamentos sin importar el volumen de trabajo que pueda haber. (Un banquete familiar, una conferencia con un cóctel para
300 personas y el día a día del restaurante no deben bloquear el buen servicio del room service, por ejemplo). Nosotros tene-
mos la suerte de contar con las instalaciones y la experiencia para hacerlo.
¿Qué futuro le augura a estos restaurantes y en que deberían de mejorar para situarlos en el lugar que merecen?
Entiendo que ya no es futuro sino presente, ya que tenemos grandísimos restaurantes con numerosas variedades de coci-
na en hoteles de toda España.
La Restauración a debate¿Cuáles destacaría como pilares básicos de toda buena cocina española?
En primer lugar la correcta selección del producto y la buena manipulación del mismo. La aplicación de las técnicas de
cocción correctas para realzar el sabor del producto, y por supuesto disponer de un buen equipo humano y de la equitación y
logística necesaria...
¿Cuáles son las tendencias actuales en el ámbito de la restauración en Madrid?
Volvemos a la cocina mas clásica y mas reconocible… sabores de toda la vida, cocina sana, baja en grasas y sin muchos arti-
lugios para volver a dejar paso a los sabores reales de un buen género. Por supuesto después cada chef aporta su “toque”.
¿Qué detalles característicos distinguen la cocina que se practica en Madrid?
Calidad, buen servicio y variedad de ofertas culinarias.
¿En que se ha progresado más durante los últimos años dentro de la restauración del sector hotelero madrileño?
Cultura culinaria. Por fin en Madrid se ha generado una importante cultura culinaria. En regiones como Cataluña o País
Vasco tienen esta cultura desde hace ya 30 años.
¿Reconoce el cliente de hotel o el ciudadano de la calle el esfuerzo que se viene haciendo en el sector hotelero para
ofrecer una gastronomía selecta y de calidad?

Entiendo que sí, ya que algunos de los restaurantes más premiados están den-
tro de las dependencias de un hotel.
¿Qué opinión le merece la influencia de las cocinas foráneas en nuestra pro-
pia gastronomía nacional?
Muy respetable aunque yo personalmente no aplico mucho de lo de fuera en
mi cocina. Mi cocina es casi casi regional, intento usar todos los productos que me
da mi región o las circundantes. La filosofía es que se mejora el producto cuando
no recorre grandes distancias hasta el consumo. Nosotros procuramos conocer no
sólo al distribuidor sino a los productores. Con esto no quiere decir que no usemos
técnicas, aderezos o géneros de distintas procedencias… pero procuramos que la base de lo que llega al plato sea de la más
absoluta confianza.
Mi cocina es castellana, trato de no fusionar cocinas ni dejarme llevar por las tendencias sino de realzar la cocina típica
de Madrid, y las influencias por contacto de las comunidades adyacentes.
¿Qué concepto tiene de la “nueva cocina experimental” y como ve las duras disputas que en torno a ella hemos podi-
do comprobar todos los ciudadanos?
Personalmente, me siento un privilegiado por haber disfrutado e incluso participado de estos cambios en la cocina. El tra-
bajo realizado por estos chefs no tiene precio. La marca generada como cocina de vanguardia española es un hito memora-
ble de nuestro país y nuestro tiempo.
Las disputas son buenas a cierto nivel. Generan crítica, suman opiniones, multiplican la expresión y resultan en mejoras. Al
final lo importante, es dar información al consumidor y que este sepa que se trabaja por dar nuevas experiencias a su paladar.
En el lado negativo… parece que si no haces una esferificación, o usas nitrógeno o sale humo de los platos no eres un
cocinero de vanguardia. Esto es irreal. Está bien que lo realicen quien lo realiza bien… pero el secreto está en aportar las nue-
vas técnicas tan integradas que se perciban como algo natural. Esa es mi idea.
Ya para finalizar, recomiéndenos algunos platos de esta temporada otoño-invierno y cuales serán algunos de los pla-
tos estrella de sus “fogones”.

This guide tries to show us the many and varied of restaurants which can be found within the most important hotels in
Madrid. These are the questions we would like you to answer:
What do you think was the reason that up till recently the food offered in these restaurants wasn't well known?
In these places which do haute cuisine or nouvelle cuisine. We haven't till now been able to market and differentiate between
two products the restaurant and accommodation. Hotel managers haven't been long in realizing that creating a quality product
in restaurants with a chef who knows his profession and can give the public what it wants can increase earnings and do wonders
for the hotel's image.

What are the good and bad points of being in a hotel?
Good points: The team and the logistics are usually more extensive
in hotels having various departments dealing in food and drink which
get in the way of sales and organization, which are designed to make
the clients feel more at home.Also in hotels with certain fame we already
have potential clients within our walls.
Bad points: given the characteristics of the space we occupy it isn't
always possible to have an entrance to the restaurant directly from the
street and you have to have the capacity to attend to the needs of all
departments in spite of the amount of work involved (a family banquet,
a conference with cocktails for 300 people and the day to day work in the restaurant shouldn't snarl up room service for
example) We are lucky to have the facilities and the experience to do it.
What does the future hold for those restaurants which have to improve to get to the place they deserve?
I understand there is no future without a present,we now have great restaurants with a wide variety of dishes in hotels in Spain.
The restaurant debateWhat is the cornerstone of good Spanish cooking?
In the first place, selecting the right product and knowing how to make the best of it. The application of the correct cooking
techniques to bring out the flavour and of course to have a good team and have the necessary utensils and logistics available.
What are the trends in gastronomy in Madrid?
We have gone back to the classical and the best known, traditional flavours, healthy eating, low in fat and devices to let
the flavour of excellent produce soak through. And of course each chef has his particular touch.
What characteristics distinguish the cooking in Madrid?
Quality, good service and a wide offer.
What has made most progress in the last few years in the restaurant and hotel trade in Madrid?
Culinary culture. At last Madrid has generate an important food culture. In places like Catalunya and The Basque Country
have had this culture for 30 years.
Do hotel guests and the general public recognise the effort made in the hotel trade to offer a select and quality
gastronomy?
I think so as some of the most prized restaurants are within hotels.

What do you think of the influence of foreign cooking in our national
gastronomy?
It is well respected but I personally don't use it much in my kitchen.My cooking is
regional, I try to use all the products from my region or the surroundings. The philosophy
is that the product is better when it doesn't have to travel long distances before it is eaten.
We try to get to know not only the distributor but the producers.I am not trying to say
that we don't use techniques, preparations or goods from different sources... but we try
to assure ourselves that what gets on to our plates is the best possible.
My cooking is Castillian. I try not to mix it with other types and try not to follow
the trends but produce typical Madrid dishes,with the influence from the adjoining communities.
What do you think of “nouvelle cuisine” and what do you think of the arguments raging around this subject which
everyone has heard about?
Any elemento of learning or improvement is always welcome independantly of its origin.
What do you think about the “new experimental cuisine” and what is your opinion about the serious arguments we have
observed in this respect among all the townsfolk?
Personally I feel privileged to have participated in these changes. The work done by these chefs is priceless. The name
nouvelle cuisine is a big hit for our country and for our time. On a certain level arguments are good.They generate criticism,
add opinions, increase expression and result in betterment. In the end the most important is to give information to the consumer
and that they know you are working to give their palates new experiences.
On the down side: it seems if you don't make a sphere or use nitrogen or smoke doesn't come out of the plates you aren't
a nouvelle cuisine chef.
That's nonsense. It's good that you do what you do well... but the secret is to use new techniques which become so integrated
that they seem natural. This is my idea.
To finish with can you recommend some dishes for autumn/winter which will be the most popular dishes in your
fogones?
Castillian soup San Pedro with crunchy morcilla and soup with raw peas-fried vegetables with a layer of Iberian ham- Iberian
ham, mushrooms thinly sliced with toasted pine nuts... Who would say that Castillian dishes are boring?

El cerdo doméstico adulto tiene un cuerpo pesado y redondeado,hocico comparativamente largo y flexible, patas cortas con pezu-ñas (cuatro dedos) y una cola corta. La piel, gruesa pero sensible,está cubierta en parte de ásperas cerdas y exhibe una amplia va-riedad de colores y dibujos. Son animales rápidos e inteligentes.
Adaptados para la producción de carne, dado que crecen y ma-duran con rapidez, tienen un período de gestación corto, de unos114 días, y pueden tener camadas muy numerosas. Son herbívo-ros en estado salvaje porque tienen una mandíbula preparadapara vegetales. En su domesticación se les da también carne,siempre picada, pero consumen una gran variedad de vegetales.Además de la carne, del cerdo también se aprovechan el cuero(piel de cerdo) para hacer maletas, calzado y guantes, y las cer-das para confeccionar cepillos. Son también fuente primaria degrasa comestible, aunque, en la actualidad, se prefieren las razasque producen carne magra. Además, proporcionan materia pri-ma de calidad para la elaboración del jamón.
Los cerdos reciben diferentes nombres de crianza:• Gorrino, cuando son menores de 4 meses de edad.• Cochinillo, cuando todavía maman.• Verraco, al cerdo macho que se destina a la reproducción.• Cochino, a los cerdos cebados para la matanza.• Lechón, al cerdo macho de cualquier edad. En Argentina,
Uruguay, Chile, México y España, a los que maman.• Cocha, o Gocha, otro nombre para la hembra del cerdo.• Piara, se llama a un grupo de cerdos.• Puerco, cochino cebado.• Chancho, Chancha, cerdo macho ó hembra de cualquier
edad (en Uruguay, Chile y Argentina).
Una camada de cochinillos generalmente tiene entre 10 y 12 ani-males, dependiendo de la raza y del número de parición. El tiem-po ideal de lactancia para los lechones criados en cautiverio es de21 a 28 días. El destete se puede clasificar en tres periodos:
• Periodo de lactancia de destete precoz: 21-28 días• Periodo de lactancia de destete ultra precoz: 1-10 días• Periodo de lactancia de destete tradicional: 56-63 días• Del cerdo se dice que es el único animal que nunca muere
de viejo, debido a que su destino es en muchos casos la ma-tanza, y que del cadáver del cerdo se aprovecha todo, yaque se usan en la cocina incluso las partes que en otros ani-males siempre se han desechado: patas, morro, orejas, intes-tinos, testículos, órganos internos (riñones, hígado, pulmo-nes, corazón...), etc.
Los cerdos son a menudo asociados con la glotonería y la sucie-dad; esto último proviene probablemente de su hábito de revol-carse en el lodo o barro, que, en realidad, es una actividad desu higiene que contribuye a eliminar parásitos y demás agentesinfecciosos alojados sobre la piel. De hecho, el cerdo es, en rea-lidad, uno de los animales más limpios de la granja.
EL COCHINILLO AL HORNO DE LEÑAEl asado de cochinillo o tostón al horno es otro de los asados típicoscastellanos que dieron la vuelta al mundo desde le legendario Me-són Cándido de Segovia. Aquí en Madrid el afamado restauranteAsador Real inmortaliza esta tradición, dándole el máximo senti-do a este plato a todo aquel que se precie a degustarlo, en estelugar junto al Palacio Real, el Teatro Real y la plaza de la Ópera.

EL COCHINILLO
Todos aquellos que deseen inmortalizar su paseo por un lugartan emblemático de la ciudad de Madrid, no puede dejar de ha-cer un hueco en su agenda y su “estómago” para degustar algu-nos de los platos característico de este Asador que le harán sa-borear al máximo la ciudad: Cordero y Cochinillo asado al hor-no de leña, Pescados y Carnes rojas a la parrilla. Nos gustaríadestacar en particular el Jamón ibérico de Bellota Reserva Arturo Sánchez y su maravillosa Gamba blanca de Huelva y to-do ello acompañado por una amplia Bodega de Vinos de la másalta calidad: Rioja, Ribera del Duero y otras denominaciones.El "tostón" es un cerdito de 3 semanas. El secreto es que sea unexcelente cochinillo y el arte de asar.
Ingredientes:• Un tostón (cerdito). La calidad del cochinillo es muy impor-
tante, tendría que tener unas tres semanas y media y nopasar los 5 kilos.
• Manteca• Ajos• vino blanco• Sal fina• Si el tostón es de buena calidad no necesita más ingredientes.
Elaboración de Cochinillo asado:1º. Paso: Se pone el tostón en una fuente de barro, que antes
se unta por dentro y por fuera con la manteca de cerdo, yla introducimos al horno. Los ortodoxos dicen que el tostónhay que hacerlo en horno de leña, para que se ase a fuegolento, en un tiempo aproximado entre una hora y 45 minu-tos y dos horas , una de las claves del tostón al horno.
2º. Paso: Cuando lleve aproximadamente una hora y 30 minu-tos en el horno se rocía con vino blanco.
Algunos consejos de Utilidad:• En alguna recetas tradicionales son imprescindibles las ramas
de laurel (no las hojas), se suelen colocar en el fondo del
cuenco de barro.De esta forma seevita también queel cochinillo toqueel fondo de labandeja. Otrosson partidarios deponer unas tabli-tas de madera enla cazuela o ban-deja de asar.
• Los ajos picadosse pueden mez-clar con la mante-ca de cerdo .
• Si no hay hornode leña, debe re-cordarse hacer elcochini l lo a unfuego suave, len-tamente, regádolocon su jugo fre-cuentemente para que nos se seque. Los expertos aconsejanuna tempera tura de asado "alta al principio, para sellado deporos, media durante todo el proceso y alta al final si hicierafalta".
• Si se asa el cochinillo entero es importante armarlo bien. Paraello un truco es poner en el hueco de las entrañas 2 ó 3 man-zanas reinetas y en la boca un limón.
• Cuando vaya adquiriendo el color hay que pincharlo con unaaguja varias veces para que expulse el aire y se facilite la for-mación de la corteza crocante.
• Otro detalle, si no se quiere que se quemen las orejas y el rabodel tostón es protegerlas con un poco de papel de aluminio.

The adult domestic pig has a heavy, rounded body withcomparatively long, flexible snout and short trotters with hoofs(four toes) and a short tail. Its skin, which is thick but sensitive, ispartly covered with coarse bristles and has a wide variety ofcolours and designs. These are quick, intelligent animals.
Adapted for meat production, since they grow and mature quickly,they have a short gestation period, of about 114 days, and mayproduce quite a numerous litter. They are herbivorous in their wildstate because they have jaws that are designed for eatingvegetables. When domesticated, they are also given meat (alwayschopped) but they consume a wide variety of vegetables. Apartfrom its meat, the pig's skin is also used (pigskin) to make suitcases,shoes and gloves, and the bristles are used to manufacture brushes.They are also a primary source of edible fat, although the breedsthat produce lean meat are preferred today. In addition theyprovide quality raw material for the production of ham.
Pigs are given different breeding names:
• Gorrino, when they are less than 4 months old.• Cochinillo, when they are still suckling.• Verraco, the name given to the male pig used for
reproduction.• Cochino, pigs fattened for slaughter.• Lechón, any aged pig. Suckling pigs in Argentina, Uruguay,
Chile, Mexico and Spain.• Cocha, or Gocha, another name for the sow.• Piara, is the name of a group of pigs.• Puerco, fattened pig.• Chancho, Chancha, male or female pig of any age (in
Uruguay, Chile and Argentina).
A litter of piglets usually has 10 or 12 animals, depending on thebreed and number of litter.
The ideal suckling period for piglets reared in captivity is 21 to28 days. Weaning may be classified in three periods:
• Early weaning nursing period: 21-28 days• Ultra-early weaning nursing period: 1-10 days• Traditional weaning nursing period: 56-63 days• Pig is said to be the only animal that never dies of old age
because it is in many cases used for slaughter and the wholeof the pig carcass is taken advantage of, and even thoseparts that have always been rejected in other animals areused for cooking: Trotters, snout, intestines, testicles, internalorgans (kidneys, liver, lungs, heart…), etc.
Pigs are often associated with gluttony and dirtiness; the latterpossible is because of their habit of rolling in the mud or sludgewhich is in reality an activity related with their hygiene which helpseliminate parasites and other infectious agents lodged in their skin.A pig is, in reality, one of the cleanest animals on the farm.
CHARCOAL ROAST COCHINILLORoast suckling pig ("cochinillo” or “tostón”) is yet another ofthe typical Castilian roast dishes that have found their wayaround the world ever since the legendary Mesón Cándido ofSegovia. Here in Madrid, the well-famed restaurant AsadorReal (Royal Roaster) immortalises this tradition, giving itmaximum significance for all whodeign to try it in this venuenext to the Royal Palace, the Royal Theatre and the Operasquare.

"Tostón" is a 3-week old piglet. Thesecret is for it to be an excellent sucklingpig and the art of knowing how to roast.Ingredients:
• A “tostón” (piglet). The quality of the“cochinillo” is very important; it must be about three wek’sold and not weigh more than 5 kilos.
• Lard• Garlic• White wine• Table salt• If the suckling pig is good quality, no further ingredients are
needed.
How to prepare roast “Cochinillo”:1st. Step: Put the suckling pig, that has previously been greasedon the inside and outside with lard, in a clay ovenware dish andplace it in the oven. The orthodox opinions say that a “tostón”
must be roasted in a charcoal woodoven, so it can be cooked slowly, takingapproximately one hour 45 minutes totwo hours, one of the key factors for aroast “tostón”.2nd. Step: When it has been roughlyone hour 30 minutes in the oven, we willdouse it with white wine
Some useful advice:• Some traditional recipes say twigs of
bay leaf (not the leaves) must be used;they are usually laid on the bottom ofthe clay ovenware dish. This alsoprevents the “cochinillo” from touchingthe bottom of the tray. Others are infavour of putting pieces of woodenslats in the roasting dish or tray.
• Chopped garlic can be mixed with thelard.
• If there is no charcoal oven, we mustremember to roast the “cochinilla” slowly, at a low heat, bastingit frequently with its juice to prevent it from drying. Experts advise a“high” roasting temperature at first to seal the pores, a “medium”temperature during the entire process, and a "high temperature" atthe end, if necessary. • If the entire “cochinillo” is roasted, it is important to prepare
it properly. To do so, one of the tricks of the trade is to put 2or 3 cooking apples inside the carcass and a lemon in itsmouth.
• As it changes colour, it must be pricked several times with askewer to eliminate the air and facilitate the formation of thecrackling.
• Another trick is to protect the ears and tail of the “tostón”with a piece of kitchen foil to prevent them from burning.
