In this interview, we talked with chemist Martha Giles Gómez about the nutritional,

microbiological, and probiotic contents and properties of Pulque; a traditional Meican

alcoholic beverage! "hroughout the interview, we discussed the nature of probiotic foods and

their inherent microorganisms, while also tackling the stigma that Pulque currentl# holds in our 

modern Meican societ#; being regarded as a poor man$s option for alcohol consumption with a

high content of pathogenic bacteria!

Giles Gómez has published several articles regarding the nutritional and microbiological

 properties of traditional Meican beverages, along with the genetic makeup of some of the

microorganisms that inhabit them!
