Se han escogido para esta edicin
10 productos ecuatorianos que se
pueden internacionalizar. Son
las Universidades e Institutos de
Gastronoma a lo largo de todo el
pas, que han desarrollado estas
recetas donde entregan su cono-
cimiento, creatividad y pasin.
Un libro tcnicamente realizado
por la Asociacin de Chefs, con el
aporte nutricional de los platos y
traducidos al ingls para deleite de
las grandes mesas del Ecuador y el
mundo.

grandes desafos que nos hemos
propuesto por el amor que tenemos
a nuestro Ecuador y con el gusto

Islands bewilder us with their
myriad colors, aromas, and flavors.
For the present edition, we have
chosen 10 Ecuadorian products
that are ideal for the international
arena. Universities and institutes
of gastronomy throughout the
country have worked to developed
the recipes featured here,
showcasing their commitment,
knowledge, creativity and passion.
Officially produced by the Chefs
Association, this book features
nutritional information and has
been translated into English so
that it may delight at the most
distinguished of tables,
in Ecuador and beyond.
This edition is the first of several
challenges we have undertaken
because of our love for Ecuador, for
the pleasure of sharing it with the
lovers of good cuisine everywhere
an initial foray that we are
confident will increase gastronomic
tourism in Ecuador.

Un viaje gastronmico por los sabores del Ecuador
En nuestro pas se han venido desarro-llando varias tendencias culinarias que han ido es-tructurando diferentes propuestas. La Asociacin De Chefs Del Ecuador, ha liderado desde el 2002, un programa que busca el fortalecimiento de las co-cinas regionales del Ecuador, este proceso ha tenido el apoyo acadmico de las principales escuelas, uni-versidades de gastronoma y hotelera del pas.
El compromiso de la nueva generacin de cocineros ecuatorianos ha sido lejos el de simples recolectores de informacin, ha sido un proceso en el que las escuelas han participado en forma activa con el liderazgo de importantes chefs y cocineros del pas, para reorganizar el archivo histrico de la cocina desde un punto de vista cultural y aplicando la regionalizacin de informacin, partiendo de los productos que son la base de la culinaria a nivel mundial.
Hemos establecido cuatro regiones que presentan distintos pisos climticos, en los que en-contramos variedades de plantas, frutas y vegetales al igual que diversos animales y peces que son la base de lo que hoy en da conocemos como cocina ecua-toriana. Este viaje gastronmico por nuestro pas invita a nacionales y extranjeros a conocer nuestra cultura, nuestros productos y la manera en la que nosotros utilizamos estos gneros para realizar una de las gastronomas ms diversas y completas de Amrica, con origen preincaico y productos utiliza-dos en el gran reino del Tawantinsuyo, as como pro-ductos de la poca republicana, de la poca virreinal y la presencia de la cocina de vanguardia ecuatoriana que es el resultado de todo este proceso evolutivo que ha tenido nuestro pas.
La Asociacin De Chefs Del Ecuador ha venido trabajando directamente con las escuelas y universidades del pas para iniciar un proceso acadmico que ayude a la recuperacin de nuestra historia y de nuestros productos, es muy importante como pueblo o como cultura conocer de donde venimos para saber a donde vamos, el Ecuador ha iniciado un proceso serio y tecnificado para lograr este objetivo y Ecuador Cultura Gourmet es un proyecto maravilloso que nos brinda la gran opor-tunidad de ensear al mundo lo que talentosos cocineros de nuestro pas pueden hacer, es un tra-bajo que integra la participacin de las 10 mejores escuelas del pas y tiene un soporte acadmico que ayuda a la interpretacin adecuada de nuestra co-cina, enfoca la importancia de los productos del
Introduccinpas, en forma visual y muy didctica; nos ensea a apreciar y a conocer nuestros productos, esto tiene un gran valor ya que este proyecto busca el interna-cionalizar estos conocimientos ancestrales y ayudar a que nuestros productos puedan ser identificados en pases europeos, Estados Unidos y Canad.
Es importante destacar el esfuerzo y la gran responsabilidad que tienen las escuelas gastronmi-cas del Ecuador, ya que ah se formarn las nuevas generaciones de cocineros, que revolucionarn nues-tra cocina conservando nuestras races culturales y ancestrales, pero incorporando valiosas herramien-tas tcnicas a estos procesos y aadiendo estndares sanitarios y nutricionales. Ecuador no podr com-petir en Latinoamrica si no incorpora tecnologa, que es parte del proceso de globalizacin.
El respeto irrestricto a la cultura, a las tradiciones y nuestra historia, es el elemento fun-damental para el inicio de un proceso de moder-nizacin y entendimiento de que las cocinas en el mundo no se dividen en los pases desde un as-pecto geopoltico, que en nuestro caso sera en pro-vincias, si no en una divisin territorial, en base a pisos climticos, donde los productos sean la base de las cocinas regionales que se encuentran en cada pas, es por esto que no podemos definir el origen de una humita a la provincia de Bolvar por que en varias provincias del pas se elaboran humitas, pero s podemos definir al maz como un producto que es la base de la elaboracin de humitas en distintas regiones del Ecuador. La coordinacin adecuada con distintos actores del turismo en el pas, liderados por la Aso-ciacin de Chefs del Ecuador facilita la socializacin de nuevos conceptos fundamentales y la colabo-racin de las escuelas culinarias, que en este proyec-to han credo oportuno innovar. Todos estos actores son parte de la solucin de los diversos problemas que enfrenta el sector turstico y nuestro compro-miso es aportar al desarrollo y al mejoramiento de estos servicios para que Ecuador se convierta en un destino turstico ofertando la mejor gastronoma de Amrica.

IntroductionA gastronomic journey through Ecuadors flavors
Our country has recently witnessed the development of various culinary tendencies that have each come to represent distinct offers. Since 2002, the Ecuado-rian Chefs Association has spearheaded a program to encourange the resurgence of regional Ecuador-ian cuisines an initiative widely supported by the countrys main gastronomy and hotel administration universities and academic programs.
The commitment demonstrated by the new genera-tion of Ecuadorian cooks has been far from that of simple information compilers. These are efforts by proactive schools --with the leadership of important national chefs and cooks--, to create a historical ar-chive of Ecuadorian cuisine with a cultural and re-gional perspective, parting from products that can be found internationally at the base of culinary arts.
We have identified four regions whose distinct cli-mates, and therefore unique vegetation and ani-mal varieties, have come together to conform what we now call Ecuadorian cuisine. This gastronomic journey around Ecuador invites national and inter-national audiences to discover our culture, our pro-ducts, and the way we use them to elaborate one of the richest and most diverse gastronomies in the Americas. In fact, the evolution of Ecuadorian cui-sine can be traced from its preincaic origins and the products used during the Tawantinsuyos reign, to republican and later viceroyalty-era products, to its culmination in todays vanguard cuisine.
The Ecuadorian Chefs Association has been work-ing directly with schools and universities across the country to rescue our culinary history and our pro-ducts through a rigorous and technical process for if a country is to move forward, it must first come to appreciate its origins. It is to this end that Ecuador: Gourmet Culture strives to show the world what our talented cooks can do. Thanks to the contribu-tion of the10 participating schools, and to its very visual and didactic nature, this project successfully sets forth a subtle interpretation of our cuisine, while emphasizing the importance of our national products and helping us to better appreciate them. Specifically, we hope that initiatives such as this one will grant our products greater exposure in Europe, the United States, and Canada.
It is important to highlight the great effort and res-ponsibility of Ecuadors gastronomic schools. They are continually forming the new generations of cooks that will revolutionize our cuisine, preserving
ancestral roots while incorporating important new techniques, as well as nutritional and sanitary stan-dards. This is of vital importance because, without the integration of elements such as new technologies, Ecuador will find itself unable to compete within Latin America in this context of globalization.
It is crucial to respect our culture, traditions and his-tory in order to undergo the desired modernization. This is also a necessary element to promote the unders-standing that culinary distinctions around the world cannot always be made along geopolitical lines or within Ecuador, along provincial boundaries. They should be catalogued territorially instead, as different climates bear different products and determine the regional cuisines within countries. In Ecuador, for instance, it is impossible to define the origins of hu-mita (made of ground corn and other condiments) to the province of Bolivar because the dish is found in other provinces as well. However, we are able to iden-tify maize as a basic ingredient of humitas in several regions throughout the country.
While change and innovative concepts are bound to encounter some resistance, efforts led by the Ecuadorian Chefs Association to coordinate with different agents in the domestic tourist industry has contributed to the socialization and acceptanceof these ideas. Similarly, the countrys culinary schools commitment to this process stems from its belief in the need for this type of evolution. It is important to recognize that embracing this concerted efforts approach will lead us to the level of excellence in ser-vices that we as a country, and tourist destination, must offer. In Ecuador, we hold a comprehensive vi-sion of the tourism industry, for it involves hospi-tality, transportation, travel agencies, and, of course, gastronomy. We are conscious that each of these sec-tors can and must be part of a solution to the myriad challenges currently faced by the national tourism industry. We aim to contribute thus to the develop-ment and improvement of services, so that Ecuador may become renown as the best gastronomic tourist destination in Latin America.

Las virtudes de la ortiga como alimento superan a algunas yerbas, la ms importante es la capacidad de detener hemorragias y su contenido en minerales como el hierro, el silicio. Por su parte la trucha provee de protenas y grasas saludables para el corazn.
procedimiento disolver la levadura con la leche tibia colocar las harinas tamizadas en un recipiente junto con el azcar, las yemas y la sal verter la leche poco a poco mientras se va batiendo para que no se forme grumos y obtener una masa lisa cubrir con un film plstico y dejar reposar por 30 minu-tos pasado este tiempo, agregar la mantequilla derretida y fra finalmente incorporar las claras batidas en forma envolvente colocar las porciones pequeas de preparacin en un sartn antiadherente, ligeramente engrasado coci-nar por ambos lados, a fuego medio, retirar y reposar en una rejilla procesar la trucha junto con la pasta de man, cebolla, jugo de limn, aceite, sal, pimienta y el cebolln picado colocar en un film plstico dndole forma de cilindro y llevar a refrigerar por lo menos dos horas

Nettle is a very nutritional herb: it helps stop hemorrhages and has high iron and silicon levels. Trout, meanwhile, contains proteins and fats that are good for the heart.
