Nutritional Value of Almond Milk
• Almond milk is one of the most nutritious milk substitutes available. It doesn't contain saturated fats or cholesterol, but it does contain omega-3 fatty acids, so it's very good for your heart. Almond milk is high in protein; the typical eight ounce serving of almond milk contains about one gram of protein. One serving of almond milk also contains about one gram of dietary fiber.

Benefits of Almond Milk
• Almond milk is great for those who are lactose intolerant, because it doesn't contain any lactose. Almond milk also contains no soy, so it's good for those who suffer from soy allergies. Because almond milk doesn't contain casein, a milk protein that's chemically similar to gluten, almond milk is appropriate for those who suffer from gluten allergies

• Almond milk contains ground almonds and water. It's a healthy alternative to cow's milk, and contains more vitamins and minerals than soy and rice milks. Many people who've tried almond milk prefer the flavor of almond milk to that of soy and rice milk

Ingredients
1) 1.5 cups or 220 grams of raw almonds (unsalted, uncooked) 2) 4 cups or 940 milliliters of filtered or spring water, plus water for soaking 3) 1 vanilla bean; scoop out the seeds; alternatively, use 1/2 teaspoon vanilla essence or extract

Steps

1.Soak the almonds in water overnight. Do this for at least 8 hours, up to about 12 hours. The soaking softens them well for use, but is optional. Drain the water from the almonds.

3.Sweeten to taste if desired. If you want to sweeten the almond milk, add rice syrup, honey or other reasonably
healthy sweetener, to taste

4.Strain. This is very important or you will be drinking almond pulp as well as the milk. Using something like a very fine strainer or sieve, or several layers of cheesecloth (muslin), pour the almond milk through
the filter into a large bowl underneath.

6.Use. Almond milk can be used with a range of foods where you would use dairy milk, such as for cooking, for cereals, for drinking,
etc. Those who love almond milk often find drinking it is best.
